Simple Cantonese Dinner for Two



The most common cooking method for Cantonese dish is stir fry. The common dinner of a Cantonese family of 4 usually contains 3 dishes and 1 soup. In my family, 1 dish would be fish as my dad is a fish eater and 1 dish would be vegetable. The remaining dish would usually be some stir fry. So, here are 2 very common dishes we would make at home. Simple and tasty! 

西芹炒雞柳 (Stir Fry Celery with Chicken Thigh)

Ingredients:
  • 2 Chicken thighs, boned
  • Several stalk of celery
  • 2 cloves of garlic
  • Light soy sauce, rice cooking wine, sugar salt to taste
  • oil
Cooking Direction:
  1. Cut the boned chicken thighs into the small pieces (about 1 inch). Marinate with light soy sauce, sugar and rice cooking wine for 10 minutes.
  2. Cut the celery into 1 inch piece.  
  3. In a medium pan, heat some oil stir fry the celery. Add some salt to taste. The celery is done with color change to darker green. Take out the celery and set aside.
  4. In the same pot, heat a bit oil and fry the marinate chicken and garlic. When it is 90% done, add the celery and stir fry until done. 

香蔥煎蛋 (Pan fry egg with green onion)

Ingredients:
  • 2 eggs
  • 2 green onion
  • oil
  • salt to taste
Cooking Directions:
  1. Chop the green onion and set aside. 
  2. Fully whisk the 2 eggs and add salt to taste. Add the chopped green onion and mix. 
  3. In a medium pan, heat up some oil. When the pan is hot (when you first start to see smoke), add the egg mixture. Move the pan to make the egg spread, fully cover the pan. Turn down the heat to medium low and cook for approximately 2 minutes.
  4. Flip the egg to cook the other side for another minute or 2. Done!
