Seafood Pizza

I made pizza last week but I promise myself I won't upload it to my blog until I finish my tax refund. Finally got that done today!!! Yeah!

Yes, I made pizza! Yes, I made it from scratch, too! But I promise, it is easier than you thought it would be. Good thing about pizza is that you can throw in any topping you like. So, just try it yourself. You will be satisfied and happy about what you make. Here are what you will need:

For the crust:
  • 1 cup all purpose flour
  • 1 cup wheat flour (if you don't have wheat flour, you can use all purpose flour instead)
  • 1 envelope pizza yeast (you can use regular dry yeast but it will take 2 hours rising time)
  • 1-1/2 teaspoon sugar
  • 3/4 teaspoon salt
  • 2/3 cup very warm water (I used 1 part of boiling water with 1 part of room temperature water)
  • 3 tablespoons oil

For the toppings (you can use whatever you want but here are what I used for this seafood pizza):
  • 1 cup tomato spaghetti sauce or any tomato base sauce
  • 8 oz mozzarella cheese, break to pieces
  • 1/4 large onion, thinly sliced
  • 2 tilapia fillets or any kind of white fish, cut into chunk
  • several cherry tomato, halved
  • several mussel, washed
  • chopped parsley for garnish
  • a large handful of spring mix or rocket
  • olive oil
  • Salt and pepper to taste

Here we go...

Preheat oven to 425 F.

Combine 1 cup flour, yeast, sugar and salt in a large bowl. Add the warm water and oil. Mix together until well blended.

Gradually add the 1 cup wheat flour and mix until a soft dough ball is formed.

Knead on a floured surface or knead on a nonstick kitchen mat like I did. I totally love the nonstick kitchen mat as I can direct knead the dough on it and transfer the dough to the baking sheet directly later.

Knead, knead, knead until you have a smooth and elastic dough like this:

If you are using a nonstick kitchen mat like I did, you can transfer the whole thing (dough and the mat) directly on the baking sheet. If not, greased your baking sheet before putting the dough on. Then, use your floured hand to press the dough on the pan to form a crust.

Now is the fun time filling the pizza. Spread the sauce on top, add the mozzarella, onion, fish, tomato and mussel. Garnish with chopped parsley (do not add the spring mix, the spring mix would burn in the oven). Drizzly with some olive oil and season with some salt and pepper.

Now it is ready to bake! Put the pizza in the preheat oven and bake for 15 to 30 minutes until the mozzarella is bubbly and the crest is brown. Take out the pizza from the oven.

 Top with the spring mix.

Let cool for 5 to 10 minutes before cutting.

Enjoy~
