Tuesday Dinner

I regret that I didn't cook dinner last night and just ate some junk for dinner. I also regret that I did not get a bottle of Merlot after work. I was full but not satisfied. So, I made it all up today by getting a bottle of Merlot after work and actually cooked dinner. The wine was disappointing but dinner was surprisingly good!


Fruity Couscous Salad

Ingredients:
  • 1/2 cup couscous
  • 1/2 cup chicken or vegetable broth or 1/2 cup water with 1 tea spoon chicken powder
  • 1 tea spoon turmeric
  • 1/4 large onion, chopped
  • 1/4 cup sweet corn 
  • 1/4 cup pea
  • 1/2 large orange, cubed
  • 1/2 cup grapes, halved
  • salt to taste 
  • chopped parsley for garnish

Cooking Directions:
  1. Boil the broth or water and add into the couscous in a large air tight container. Add the turmeric. Cover and let it soak for 5 minutes. 
  2. Meanwhile, blanch chopped onion, sweet corn and peas. 
  3. When the couscous is done, lose it with a fork. Add salt to taste.
  4. Add the blanched onion, corn and peas. Mix. Then, add the orange and grapes. Mix and granish with chopped parsley.
  
Tuna  Panini

Ingredients:
  • 1 can tuna in water, drained
  • 2 table spoons mayonnaise 
  • 2 sticks celery, chopped
  • 1/4 large onion, chopped
  • 1 handful baby spinach, washed and drained
  • 1 slide of cheese (any kind)
  • 2 slides sandwich bread of your choice
  • salt and pepper to taste

Cooking directions:
  1. Mix the tuna, mayonnaise, chopped celery and onion in a medium bowl. Season with salt and pepper. 
  2. Heat the griddle pan at medium setting until a drop of water evaporate slowly. About 5 minutes. Don't forgot to heat your panini press as well
  3. Meanwhile, make your sandwich as usually. Spread the tuna salad mixture on the bread, top with cheese and spinach, close with another slide of bread. 
  4. Put the entire sandwich on the heated griddle pan and put the panini press on top. Let it grill for 3 minutes. Flip and grill the other side for addition 1 minute. Do not grill the sandwich too long. Otherwise, you will have a burn panini.

  1. oh lately I am really into malbec, if you see one called "cuma" - try it, I really liked it :) I think I might have posted a picture of the wine on my FB... if not, I can send you the picture if you are interested. It's made with organic grapes too!
