Sauerkraut Pork with Collard Greens

My beloved sister moved back home last week. That means I will need to cook for my own from now on (again). Cooking for 1 person is sometime challenging. You gotta come up with something from your fridge but can't stock up too much as you can't finish it before the food goes bad. So, here is what I come up with for dinner:

I have...
1 branch Collard Greens......check
Some Carrots.................check
1-2 Onions...................check
1 can Chicken Broth..........check
Some Cayenne Pepper..........check

So, I washed the collard greens thoroughly. Chop up everything and put them in my Crock-Pot and turn on low to let it cook overnight.

What else do I have...

Couple Pork Ribs........check
2 Apples................check
2 Onions................check
1 Bottle of Beer........check
1 can of Sauerkraut.....check
Some Brown Sugar........check

Tonight, I just quartered the apples and onions. Throw everything in my dutch oven. Top with some brown sugar and pour a bottle of beer. Baked at 350 F for an hour. Voila! Here is my dinner~
